Cinnamon buns are one of my absolute fav treats ever. I originally made these in the summer back at home but for some reason never posted the recipe on my blog?! Ingredients 

Dough – 

Water, vanilla extract, plain flour, yeast, brown sugar, salt

Filling – 

Cinnamon, coconut sugar, brown sugar, coconut oil

Glaze – 

Plant milk, icing sugar, water

Recipe

  • Pour 1/2 a cup of cold water into a large bowl and add 2 tsp of vanilla extract. If you have one, add the zest of a lemon to the mixture
  • Out of 2 cups worth, add 1 tbsp of flour and your yeast to the mix and slowly start to combine
  • Before you’ve added all the flour, remember to add in your salt and sugars
  • Transfer the mix onto a floured work top and knead for 4-5 mins to really develop the dough
  • Place the dough into a lightly greased bowl and leave to prove for an hour or so
  • In a separate bowl, mix together cinnamon and sugar to create the filling for the buns
  • Once the dough has doubled in size, flour a surface and roll the dough out into a rectangle – not too thin, as you have to roll it up many times
  • Spread the cinnamon filling equally over the dough entirely – be careful not to make a hole in the dough
  • Once covered, carefully roll the rectangle up (Landscape) making sure the roll is even
  • If you have some, use a piece of thread to slice the roll up equally into mini buns, but a knife is fine if that’s all ya got! (Just squish them into shape if using a knife flattens them)
  • Place the buns onto a baking tray lined with baking paper making sure they’re not too close together – they will rise!
  • Cook until golden
  • To make the glaze, mix icing sugar with plant milk and drizzle over the top…
